Latteria Sociale di Villa Roncadella
An historic dairy founded in 1922 and located in the Reggio Emilia plain, the Roncadella cooperative is the only Parmigiano-Reggiano dairy with a woman master cheesemaker, una casara—Marisa Verzelloni. It is said that she doesn’t need a thermometer to test the temperature of the milk, only her arm. Not afraid to walk her own path, Marisa works hard year round to produce cheese that the locals and premium retailers love. Their 24-month Parmigiano-Reggiano is their crown jewel, and its taste is rich, balanced, and persistent.
