These Golfera mortadella’s are made specially for Rogers Collection from Italian pork shoulder. The lardo (fat pieces mixed into the paste) comes from the pig’s neck. The traditional style–mortadella con pistachio (with pistachios) contains Sicilian pistachios. The mortadella con trufa (with truffle) contains pieces of black winter truffles from the local mountains and white truffles are mixed into the paste; no truffle oil is used. All are free from preservatives, dairy and gluten.
- Flavor Profile
The fragrance is intense and slightly aromatic; its flavor is delicate, full-bodied and well-balanced. When sliced, it is smooth, compact and velvety, with an even, bright pink color with evenly distributed lardo (cubes of fat) that are well incorporated into the paste.
