Mint is at the heart of Berber cuisine and used in in a variety of Tunisian recipes. Dried mint in particular is prized for its delicate, fresh addition to savory dishes. This mint starts as fresh spearmint (mentha spicata) cultivated in the fields and orchards of the Mahjoub farms in Tebourba and dried in the shade in an open space – under the heat of the warm, sunny days in the summer – to preserve its color and flavor. This drying process takes about 5 days. The resulting mint is full of antioxidants and manganese. As with all Mahjoub products, these are organic with absolutely no additives.
