Extra Virgin Olive Oil
Fruity, elegant and harmonious, yet showing verve and character, this oil springs from the slopes of Ama, in the Chianti Classico zone. The orchard is maintained by hand and the olives are hand-picked, so as not to damage the trees. Only a few hours pass between harvest and the start of the oil processing, which takes place in a small pressing house on the estate. The olives are crushed into a paste, then cold pressed using a cold-extraction centrifuge, to ensure low acidity. The oil is then delicately filtered through cotton wool, and stored in stainless steel tanks before being bottled.

This unfiltered oil is opaque, golden green in color with a fruity aroma, a strong earthy and herbal flavor up front and a lively, peppery finish.
