The Marquise Mild “Gazpacho”
This “gazpacho” can be enjoyed as a cool summer drink, a starter for summer meals, or as an afternoon snack. It can be refrigerated for at least a week. This recipe was introduced to the Rogers Collection by Marques de Valdueza in Spain and features their fabulous olive oil.
INGREDIENTS (Serves 12)
- 5 lbs. ripe, flavorful tomatoes
- 1 1/4 lbs. cucumber
- half of green pepper
- 1 medium white onion
- 4 tbsp. Vinagres de Yema, Cepa Vieja Sherry Vinegar
- 3-4 tsp. of Halen Mon Pure White Sea Salt, to taste
- one cup of Marques de Valdueza Extra Virgin Olive Oil
Carefully wash the tomatoes, cucumber, and green pepper and quarter them along with the onion. Blend the quartered ingredients together with the vinegar and sea salt in a food processor until smooth. When well blended, gradually add the oil.
Pass the mixture through a strainer and leave in the refrigerator so it is cool before serving. This can keep for at least a week, sometimes two.
At the table, garnish with diced tomato, cucumber, green pepper, onions, hardboiled eggs, or French bread, and definitely a drizzle of Marques de Valdueza extra virgin olive oil!
