Black Olive Mini Muffins
These muffins are perfect for bakers who don’t love sweets; they are reminiscent of a Mediterranean spread at a party, but can be eaten as healthy snacks. Tie on your apron and try it! This recipe is from our friends at Morgenster.
INGREDIENTS (Makes 12)
- 3oz butter, room temperature
- 1 oz Morgenster Extra Virgin Olive Oil
- spoonful of sugar
- 5 1/2 oz Les Moulins Mahjoub Black Olive Spread
- 3 eggs
- 6 1/2 oz flour
- pinch of Ravida Sea Salt
- 4tsp baking powder
Beat butter, oil and sugar.
Add the olive paste and the eggs one at a time, beating after each.
Mix flour, salt and baking powder and fold into the egg mixture.
Spoon into mini muffin tins which have been sprayed with non-stick spray.
Bake at 375°F for 12 minutes.
