This oil revisits the age-old traditions of Provence. The olives are hand-picked only when fully ripe. They are then stored in containers without oxygen for three days to ignite the fermentation process, recreating the taste of preserved black olives.
In 1997, Catherine and Jean-Benoit Hughues discovered mature olive trees in south-facing rocky land in Les Alpilles, in the Castelas locality of Provence. Their flavor was exceptional and today Domaine Castelas produces over 270 acres of olives in Provence.
